Make Cream and Cheese with Powdered Milk

Powdered milk is one of those products you probably have stashed in your pantry, without knowing how versatile it is for your kitchen. In fact, it can be used, of course, for milk and soup, but it can also help you create pantry staples if you can't get to a store. So go ahead, bring your can of milk to the front of your pantry.

*Note- All recipes are for non-fat skim powdered Milk. Powdered milk is generally non-fat/skim because fat and oil do not store well. Taking out the fat prevents the milk from spoiling over time.

Whipped Cream
Did you know that you don't need a full-fat carton of whipping cream to get delicious, creamy whipped cream? You can use canned, powdered milk to get the whipped cream you want, without the extra fat and calories. Even better, you don't have to worry about cream spoiling- an open can of powdered milk stays good for months!

What You Need:
-1  cup dry, instant milk
-Chilled Bowl (Place in freezer for 30 minutes prior to making cream)
-1 cup ice water (I like a 1:3 ice/water ratio)
-Mixer (Place beaters in the freezer with the bowl)
-4 tsp sugar
-1 tsp vanilla
In your chilled bowl, pour 1 cup instant milk and 1 cup ice water. With chilled beaters, beat  until it's blended and fluffy.  For sweetened whipped cream, add sugar and vanilla and mix until fully incorporated.

Sour Cream
Sour cream is great as a condiment, as well as in your favorite recipes. It's also very easy to make at home.
What You Need:
-2/3 cup powdered milk
-3/4 cup cold water
-1 tsp vinegar
Combine milk and water, stirring until cold.  Add vinegar and let sit for 5 minutes.  Beat until thick.  Use in your favorite recipes.

Sweetened Condensed Milk
Condensed milk makes almost any dessert delicious. Even better, it's easy to make and use.
What you Need:
-1 cup Instant milk
-2/3 cup sugar
-1/2 cup boiling water
-1/4 cup melted butter
Combine all ingredients and put it in a blender. Blend until mixed, scraping down the sides when needed. USE CAUTION to not overfill the blender. You are working with boiling water, which will burn if it splatters on your skin.
Condensed milk can be stored in a canning jar or other sealed container in the refrigerator for about a week.

Evaporated Milk
Evaporated milk is different from sweetened condensed milk in that it's not sweetened and is low in fat. It is very easy to make.
What You Need:
-1 1/2 cup water
-1/2 cup + 1 tbsp powdered milk
Mix together. Mix until completely incorporated. (Some recommend a blender)
Store in the refrigerator up to a week.

Yes, in a pinch, you can even make cheese from powdered milk. Powdered milk makes a great soft cheese. This cheese is fresh, and doesn't need to be aged. Even better, with powdered milk's low fat content, it's a healthy cheese to eat. Cheese takes several hours to make, but can be stored in your refrigerator to enjoy for days, even weeks.
What You Need:
-4 cups powdered milk
-8 cups water
-1/3 cup vinegar/lemon juice
-Large pot (you can even use a crock pot)
-Salt to taste
-Kitchen cloth
-Cheese cloth
Mix powdered milk and water a big pot until completely dissolved. On the stove top over medium high heat, bring temperature of milk mixture up to 180 degrees , stirring the whole time. (You can use a crock pot, stirring intermittently.)
Once the temperature is 180 degrees, stir in the vinegar or lemon juice, mixing well. Take off the heat. Cover with a kitchen towel and let it naturally cool to room temperature. This should take a few hours.
Using a slotted spoon or a strainer, separate the curds (the thick pieces). Spoon the curds onto a cheesecloth. Gather the ends of the cheesecloth and squeeze the whey out. The more you squeeze out, the dryer the cheese will be.
Form your cheese and refrigerate.
Variations- Add salt, garlic, yellow cheese powder, as you mix. Also, instead of plain vinegar, try balsamic vinegar for a variety of flavor.
