There is nothing that can beat a slice of sourdough toast. I plant to have a lot of bread mix around in good times or bad.

This is unusual for food storage to have sourdough bread mix! I might even open it for everyday food.

I made this in my bread maker. It came out more like a Brioche than a sourdough. Very sweet and dense. It would make a great french toast, but not good for what I look at sourdough as. Tastes like a dessert bread.

I tried some experiments using part sourdough mix and part flour to get a more realistic sourdough texture and flavor. Still working on that. I have not quite found the right balance. Although all of my experiments have been eaten, they are just not what I want in a sourdough. I will keep trying. It would also be great if you could have bread machine instructions on your cans of bread.

    From The Ready Store:

Margot, thanks for the suggestion for the bread machine instructions. That would be helpful for sure. As for it not turning out from you I will reach out to you to get the julian code on the can so I can look at the batch you got. The VERY first batch we produced was done incorrectly and small changes were made to the ingredient list that made much better results. Look for an email here shortly and I assure you we will get you taken care of. Thanks again for the feedback!

I just tried out the Sourdough Mix over the weekend and was somewhat disappointed in the product. I used both "by hand" and bread machine. The dough didn't rise very much at all and it had a little bitter flavor after it was baked. I tested the yeast and it was fine, bubbled in the cup in a couple of minutes. I have made my own sourdough starter so I am used to working with it. Might try to add just a quarter teaspoon baking soda next time, I think something in the mix is "fighting" the yeast.

I was so excited to get a sourdough bread bake mix, because sourdough has always been my favorite. As another reviewer stated, however, it wouldn't rise, and when it was so dense it was very salty and bitter (which wouldn't be an issue if it was a whole loaf of bread). I tried a few times, and even added some wheat gluten the third time to see if it would stretch it out some, but there was little to no difference. I didn't try adding anything to it to see if it made a difference, but I agree something in the mix is interfering with the yeast (i know it likes to eat the sugar, and the loaf tasted awful salty, so I wonder if the sugar content was too low?). Anyway, I hope they work it out because I would happily buy it again. (I called customer service to relate all this and they were more than willing to refund me for the purchase, so in the end I'm happy with the whole thing).

    From The Ready Store:

Johanna, we have sent out new product. Apparently our a small portion of first batch wasn't made correctly. I think you will be more than pleased with the new product that is in route. Feel free to keep the product you have already. Also look in your inbox for an email with a gift card code to use on your next order. Hopefully that will lessen the sting of having a bad experience with the product. Thanks for your business.

  • Gloriously expensive failure - from an experienced baker

I recently purchased the Bread Making ReadyPack - SKU: FD0432. I’ve been making bread for many years both traditionally using my oven and using my Zojirushi BB-PAC20 Home Bakery Virtuoso. I made several batches of white, wheat, and sourdough bread using this product following the printed instructions to the letter. The resulting breads were very flat, highly dense, and tiny for a five-cups-of-flour loaf of bread. I’ve always gotten large two pound loaves of bread using just three cups of any type of flour, so this product is definitely a disappointment when following the instructions. Reducing the water content did modestly reduce the “dimple” in the top but didn’t help with the low-rise
problem at all. Is there something wrong with either the mix or the instructions? Has any of the Ready Store staff actually attempted to bake bread using this product? If so, how did they fix the low rise (almost no rise) problem? As it is right now the Saratoga Farms bread mixes are pretty much a complete failure. I’m hopeful the Ready Store will eventually come up with a solution, but in the meantime I suggest storing and using regular bread flour until it’s widely and proudly announced the many problems with this product are corrected.
