Allergy & Specialty Part 3 - Lactose Free

Between 30 and 50 million Americans or 1 out of 10 are lactose intolerant. If you are one of those “lucky” individuals you know how important it is to make sure that your diet does not contain any products that contain Lactose.

For those who do suffer from lactose intolerance, or know someone who is lactose intolerant, today is your lucky day.   I’ve put together a list of our  Dehydrated & Freeze-Dried products that are lactose free.

If you are not affected, or have never herd of lactose intolerance here is a simple definition:

Lactose Intolerance - is the inability to metabolize lactose, because of a lack of the required enzyme lactase in the digestive system.

Did you know that most people that are Lactose Intolerant, can, however, have dairy products that are made from Goat, Sheep (Pecorino, Monchego), and Water Buffalo (most good quality Mozzarella) with no ill effects? It’s Cow milk sugars that are the allergen.

    Now it begs the question: the “Saratoga Farms Shredded Mozzarella Cheese” you list as NOT lactose free. What kind of Mozzarella is it? If it’s good quality traditional Italian type, it’s from Water Buffalo, which is digestible to most people with a diary allergy. I love cheese, so I’m always substituting. Thanks again.

    Amen to all the above, I was hoping you were going to list a group of foods that are ‘milk’ yet, lactose free. I seem to crave the stuff that needs/uses milk, I’ve also had gastric bypass surgery, so I have to be careful of the carb counts of foods….so some ‘lactose free milk’ products just add other ’sweetners’ that affects me the same way as ‘lactose intolerance’. Not good, esp. in a ’survival’ sitch where every bite could count.

    Someone needs to do as suggested, do some freeze dried goat’s milk, products *like the potato buds* and stuff like that. I’ve been looking around, and it looks like the best thing I can find are shelf stable soy products with a 2-3 year shelf life. :(

    Maybe I’ll just buy a couple of goats! :)

I’m finding that more & more of my acquaintances are being diagnosed with celiac’s disease, gluten intolerance. Angela, the Saratoga Farms mozzarella is most likely a low-moisture mozzarella, good for shredding and made with cow’s milk or a combination of cow & goat milk as is most ALL mozzarella made in the USA. Most of the “fresh” mozzarella, meaning unripened, available on the US market is a high moisture product made from cow milk and has a very short shelf life meant to be eaten fresh in salads or over pasta. It’s not even suggested to be used for pizza due to it’s high moisture content. That alone would make it not a good candidate for freeze drying. Most people buying the cheese balls floating in brined water & labeled “fresh mozzarella” would be surprised to find that it was made of cow’s milk or cut with goat’s milk and produced in the USA.
